Brown or brown with yellow patches works for banana ice-cream though.
And yellow(ish) when raw but now brown or brown with black patches is acceptable for baked in tinfoil on barbeque or fire.

Depends what you want 'em for. For eating raw, yellow with just a hint of brown speckling. For baking or mocrowaving, deep yellow with lots of big brown spots. For making hair products out of, so brown you nearly threw them away and then changed your mind at the last minute...
