Yeah, I've three in one and two in the other, one of the latter being in the top rather than the lobe. I'm counting each of those separately, regardless of when they were done.
To me it seems odd to count one-in-each-ear as one piercing, particularly given this doesn't then distinguish from people who have only had one ear pierced.
I was pierced on two occasions, and wear either one or two pairs of earrings, so it seems odd to me to think of them as four separate holes, since they don't have four separate identities, unlike, say, one set of ear piercings, a nose, a belly button, and something NSFW, which I'd think of as four, not five.
It may be moot anyway for me, since I haven't tried putting earrings into the second set in about two years now...
I see what you mean. Mind you even when I only had one in each ear I didn't always wear earrings as pairs. Not least as a result of losing one of a favourite pair and not wanting to stop wearing the other occasionally.
An odd thing I notice about body piercing is that more than any other phenomenon in the world it causes me to learn the names of body parts I hadn't previously known. It's just caused me to look up "tragus" on Wikipedia, and it was another person talking about piercings a couple of years ago who caused me to look up where one's septum might be. Piercers and piercees seem to be the only people (other than, I must presume, those in the medical profession) with a serious need to identify such bits of the body with more precision and efficiency than "that bobbly bit at the front of your ear" :-)

I can see an argument that a simple ear piercing isn't quite as ... committed ... as a Prince Albert. Perhaps we should have a weighting table.
